Crawfish and Shells

If you are using frozen tails, defrost them! Boil the pasta and drain...

In a large magnalite roaster, over high heat, melt the butter, add Guidry's and garlic. Season with the last 4 ingredients. Cook, stirring frequently, until the onions are "clear".

Add the flour and stir rapidly until you have a roux. Add crawfish, half and half and Velveeta, mix well. Cook covered, low heat for about 10 minutes, stirring occasionally.

Add shells and mix well. Cover with shedded cheese and parmesan, sprinkle on a little more taragon. Bake uncovered at 350 for about 30 minutes.
