Lisa's Incredible Baked Macaroni

NOTE: You can use any cheese you like. We use 8 oz Sharp Cheddar, and 8 oz Mexican Four Cheese. You can also use any noodles you like.

1. Preheat oven to 350°.

2. Cook macaroni in boiling, salted water according to package directions. Do not rinse. Drain well and dump into a big bowl.

3. Add margarine and stir till melted.

4. Add grated cheese, reserving a little (about 2 cups) to sprinkle on top. Stir into cheese until melted.

5. Stir in the eggs - no need to beat first, just stir well to distribute evenly. Add evaporated milk and salt and pepper to taste. Mixture will be fairly liquid.

6. Pour into a glass baking dish (coated with non-stick cooking spray): deeper is better than too shallow. Sprinkle reserved cheese on top. Bake for 45 minutes.
