Creole Sauerkraut

1. Dump jar of Sauerkraut into pot along with the Trinity and vinegar. Simmer 20 minutes.

2. Add Caraway, bacon with some of the drippings, margarine and brown sugar. Simmer 10 minutes or until liquid is almost gone.

3. Pour in the beer. Stir well and simmer until most of the excess moisture has evaporated.

Put a heaping mound of sauerkraut on top of your bratwurst and enjoy!! Don't forget the other 5 beers from that six-pack!

During Mardi Gras I like to use Abita Mardi Gras Bock.
